Homemade, Flat-noodles

Ingredients
1 cup all purpose flour/ maida
1/2 semolina flour/ Suji
¾ cup water
½ cup finely sliced green pepper
1 cup finely sliced cabbage
1 large onion finely sliced
1 large potato cut in long thin slices
2 large tomatoes grated
1 table spoon fresh garlic paste
2 table spoon coriander powder
1 teaspoon red chili powder
1 teaspoon turmeric powder
3 teaspoon salt or to your taste
1 table spoon vinegar
Cooking method:
Take a big bowl. Put all purpose flour/ Maida, semolina/ Suji in it and using ¾ cup water make hard dough. Cover and keep it aside for 15-20 minutes
Same time chop all the vegetables.
Now divide dough in 8 small parts.
Start rolling one by one into a thin Chapati using a rolling pin and then cut them in long strips/flat noodles. See in the picture.
Now pick the strips and hang them on big bowl. See in the picture.
Boil 5 cup water in a pot. Add 1 table spoon salt And 1 teaspoon oil. Add flat strips into the boiling water. Cook them till water starts boiling again and keep stirring using a fork and cook for 2-3 more minutes. Remove from the heat and drain all the water. Wash flat noodles with cold water 2-3 times. Mix 1 teaspoon oil in the boiled flat noodles so that they won’t stick together and keep it aside for later use.
Heat a pan in high heat. Add 1 tablespoon oil, add green pepper, cabbage, beans. Fry them for 2 minutes. Transfer them in a plate
Add ¼ cup oil in the same pan. Add sliced potato and fry them till they get tender. Strain potatoes and transfer in the vegetable plate.
In the same oil from where we strain potatoes, Add cumin seeds let them splutter now add onion fry them till transparent.
Heat a pan. Add oil. Add cumin seeds let them splutter now add onion fry them till transparent
Add turmeric powder, garlic paste fry for 15 seconds
Add tomatoes mix very well. Add coriander powder, red chili powder, salt and cook for 5 minutes on medium heat and keep stirring.
Add vinegar mix well. Now add flat boiled noodles prepared above, fried potatoes and vegetables and very mix well with the masala, Cook for 3 minutes. Remove from the heat.
Delicious Cho-Cho/ flat noodles are ready to serve.
Serving suggestions:
Grate small half cucumber and keep it aside
Now in a plate put some cho-cho/ flat noodles, on the top add 1 tea spoon tomato garlic chutney, ketchup, and grated cucumber and enjoy. Trust me people it's an amazing noodle recipe.
