Halibut fillet 3/4 inch thick 6 oz
1 Tbs bread crumbs
1 Tbs Crushed almonds
1 egg.
1 tsp melted butter
Sauce ingredients
1/3 cup dry white wine
2 Tbs cider vinegar
2 Tbs fine cut shallots
1 sprig fresh thyme
1 Bay leaf
1/3 cup heavy cream
10 Tbs unsalted butter cut peices
3 Tbs fresh chives fine cut
2 tsp lemon juice
Salt, pepper as taste
Small sauce pan on medium heat add wine, vinegar, shallots, thyme, bay leaf.
Boil till liquid evaporate.
Stir in cream
Boil and simmering low heat
Whisk butter one peice at a time before previous melted. Keep mixing.
Strain sauce in to a heat proof dish
Stir in fresh chives, lemon juice, salt and pepper.
Place in a hot water container.
Untill ready to serve. Sauce can be made in advance.
Pre heat oven on broiler
Pat dry fish
Season with salt and pepper.
Heat oil + 1 Tbs butter in a large pan on a medium heat sauté halibut fillet 2-3 min each side.
Untill light brown.
Transfer to a baking sheet let it cool down for 5 min.
Use parchman sheet.
Small bowl stir bread crumbs and crushed almonds.
Brush fish with melted butter.
Brush fish with egg.
Spread with almond and bread crumbs mixture on top of fish.
Broil 1-2 min till lightly brown.
Serve with sauce and veg.

Make sauce extra as you can keep it for few days.
