Personally, I think they should have used the gold, blue and red 2-piece uniforms, at least on the USS Shenzhou to tie the series into the TOS era more. The USS Discovery can be a different beast as it's probably on a covert mission and wouldn't necessarily have to look like other Starfleet vessels (inside and out). There's more on this in this post.
