Great day fellow Steemians! Here is MY ENTRY for our contest "SUMAN"
Antipolo is one of the most visited place in Rizal. The icon that make Antipolo a MUST-SEE destination. This is known as Pilgrimage City of the Philippines. Devotees visit the Antipolo Cathedral specially during month of May for they called “Alay Lakad”. Aside from this, Antipoleños celebrate SUMAKH Festival to promote the specialty products like SUMAN, MANGGA, KASOY and HAMAKA. Most tourist don’t forget to buy their Souvenirs or “Pasalubong”. That is why I chose suman for my Entry for you to give a bit idea.
Suman is made of glutinous rice with 6 different varieties to choose.
- Suman sa Ibos – “Ibos” pertains to the buri or palm leaves which prepared first (swirl) before they put the glutinous inside. It should be properly locked to hold its form. The taste is less sweet and salty. The preparation time is 10mins and cooking time is 45mins.
- Suman sa Lihiya – Other called this as Suman Bulagta or Mag-asawang Suman. A Glutinous rice mixed with a bit of lye water, wrap in banana leaves per serving then boiled in water. This usually top with coconut jam or grated coconut with sugar. Preparation time is 15 mins and cooking time is 45 mins.
- Suman sa Antala – Cooking in the mixture of glutinous rice and coconut milk with salt, wrap in banana leaves then steam until it’s firm.
- Suman sa Kamoteng Kahoy – “Cassava Suman”. It is compromised with grated cassava, coconut milk and brown sugar. 40 mins of total time for preparation and cooking thru steaming.
- Suman sa Ube – Ground glutinous rice mixed with boiled smashed ube, sugar, a little bit of salt and coconut milk. Once it is cooked and wrapped then steam for a while.
- Suman sa Moron – Chocolate Suman. A smoother type of suman made of 2 types of rice. 1) cooked in coconut milk 2) cocoa powder with milk. Soak the glutinous rice overnight then grind on the following day. Once prepared and wrapped, it will steam until it’s cook.
I already taste all those suman with perfect combination of coffee or chocolate drink ^^. The hardest part is to decide which topping you will enjoy. But for me, best eaten with sweetened langka. ^^
