Hello my Dearest Foodies,
As I am writing this, I am waiting for my daughter to pick me up because today is my son in law's BD party and I made these for him. Well, I am sure he will not eat all of them; my daughter probably will, if there is any left after the party, lol.
Anyway, I had a different desert planed to make for this occasion, however, things didn't turned out as I was hopping, lol. Luckily, energy balls always save the day and you can even make them quite presentable. Not to forget, they are delicious, full of nutrients and easy to make!
I wish you a wonderful weekend and make sure you eat your fruits and veggies!
ASSORTED SUPERFOOD BITES
Raw Energy Balls made with Dates, Nuts, Cacao and other Superfoods
Raw β Vegan β Gluten Free β Refined Sugar Free
Author: Lena's Vegan Living
INGREDIENTS for 16
β’ Medjool dates 2 cups (pitted, soaked for 15 min and rinsed)
β’ Almond flour ΒΌ cup
β’ Coconut oil ΒΌ cup (melted above steam)
β’ Pumpkin seeds Β½ cup
β’ Puffed quinoa 1 cup
β’ Cacao powder 2 tbs
β’ Maca powder ΒΌ cup
β’ Flaxseed powder ΒΌ cup /2
β’ Pink Himalayan salt Β½ tsp
β’ Pure vanilla extract 2tsp
β’ Tray
β’ Parchment paper
COATING
β’ Matcha powder ΒΌ cup
β’ Red beet powder ΒΌ cup
β’ Cacao powder ΒΌ cup
β’ Almonds crushed Β½ cup
PROCESS
β’ Start blending the dates in a food processor by pressing pulse button.
β’ Gradually keep adding all the rest of ingredients except puffed quinoa and pumpkin seeds.
β’ Blend until smooth, transfer into a bowl, add the seeds and quinoa puffs and mix gently but thoroughly.
β’ Cover with lid and place into a refrigerator for 1 hour for the mixture to cool so itβs easier to work with.
β’ In the meantime, line your tray with parchment paper.
β’ When ready, start making balls by using mini ice cream scoop or spoon, scooping 2tbs of mixture per ball.
β’ Roll each in your palm and place on the tray.
β’ When ready, store those you want to coat in Matcha and Beet powder into a freezer for one hour.
β’ The ones you like to coat in crush almonds, you can dip immediately.
β’ For Matcha a Beet powder is best to use small sifter. Just separate the once you would like to coat with your chosen powder on parchment paper and lightly dust them using a sifter. Turn them around ad repeat until all sides are covered.
β’ Store them in a sealed container and keep in a refrigerator. If you decide to make more, you can also store them in a freezer as long as they are sealed well.

I thought of you Katie and all your dates, lol. Thank you so much π
I was too lazy to make balls last week, but I did make some bars at least that I'll share soon. Hope everyone enjoyed the celebration!
Ohhhhhhh i can wait to see those, because I was thinking making squares. I am just not sure what to do for the bottom layer. Whether I should do raw, or baked; spelt or gluten free. I have to sleep on it, but I am curious what you will come up with π
Very nice recipe and excellent presentation, as always :)
One question, though.
When do you add puffed quinoa and pumpkin seeds?
Thank you!
Thank you soooooooo much for visiting and letting me know about the mistake @fotostef. You know how it is when you writing something with one foot at the door, lol. I made the correction in the recipe now. I really appreciate your comment π

Those look almost too beautiful to eat Lena! I love superfood treats. Well done. I'm sure that they are going to love them. Enjoy your family time together dear @lenasveganliving
Awwwwwwwwww, thank you so much my Dear Tracey. Well my daughter put them in fridge for her self and the boys. Well, I am sure my son in law is going to have some too. But the guests didn't get any, lol. Otherwise, I enjoyed the time with my grandsons the most, I don't really care about parties. But I am sure you can relate to that π
Yes! I absolutely relate to not caring for parties. But time with the family is special. Enjoy every moment with those precious grandsons Lena! Children grow so fast....
Oh yes they do and since they turned three they are talking more every time I see them and it's so funny! But you know, even if your boy is younger π
Absolutely! He's two and he amazes us by his vocabulary and grasp of conversations! But he can also be funny. It's a special age watching small children discover the world around them. So inspiring
Yes! Exactly! I just love spending time with them π
Superfood desserts? Yummy!
