Are you a pancake lover like me but no patience to spend so much time for the flipping waiting game?
Well, today I am going to share an easier and quickest way of making the pancake in just twenty minutes. A pancake that you can freeze and re-heat whenever you want to have it either breakfast, brunch or midnight snack.
So what was the pancake making hack? It’s by baking it in the oven for 15 minutes using a baking pan and parchment paper. A muffin pan and round cake pan can also be use. I saw this idea through a cooking hack video shared on facebook a week ago but I forgot to save the video for the complete recipe. So after I went to the Supermarket last Saturday to buy some of the ingredients for my upcoming recipes, I gave this oven bake pancake a try and it actually turns out good!
This morning I made it again but this time, I mix the plain pancake with some fruit toppings. You can choose any toppings you like either fruits, shredded coconut, cream cheese, chocolates and almonds for (an extra af 🤤😁) a treat.
So without further ado, let’s get pancake baking!
Servings: 4 persons
Preparation: 15 minutes
Baking: 15 minutes
Total Time: 30 minutes
INGREDIENTS:
- 2 cups (or 280g) pancake mix
- 2 eggs
- 1 cup or 250ml milk
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 25 g white sugar
Toppings (Optional):
- 2 pcs. strawberries, sliced
- 1 pc. Kiwi, sliced
- 1 pc. orange, sliced
METHOD:
Preheat oven to 425˚F (220˚C).
In a large mixing bowl, pour the ingredients except for the fruit toppings. Mix and combined properly using a wisk or a mixer.
Place a parchment paper on your baking pan properly. Grease it with a small amount of oil to avoid from sticking then pour and spread the batter evenly.
- Place your preferred topping on top of the batter and place into the oven. Bake for 15 minutes or until it’s golden brown.
- You know it’s good to go when you inserted a toothpick and it comes out clean.)
and walaaah! divide by slicing into squares, drizzled with a little bit of icing suagar (optional) and it’s ready to serve!
Enjoy!
(To reheat, place on a microwavable plate and reheat for 20 seconds per slice.)
