INGREDIENTS:
- Chicken
- Bacon
- Onion
- Oil
- Red wine
- Bird background
- English sauce
- Salt
PREPARATION:
- Mise en place

- Reserve in the refrigerator.

Preparation
- Sauté by concentration the chicken to seal in a pan with oil over high heat,

- above) and deglasar with red wine. Finish cooking in a pan over a low heat and
- covered for 15 minutes. As the liquid is reduced add bird bottom
- (do not turn the chicken).
- Once the ½ chicken has been cooked, add English sauce to rectify the flavor and
- texture.
- Season if necessary
