               INGREDIENTS:

  • Chicken
  • Bacon
  • Onion
  • Oil
  • Red wine
  • Bird background
  • English sauce
  • Salt

            PREPARATION:

  • Mise en place
  • Bone in ½ chicken, leaving a breast attached to the thigh paw through the skin.
  • Reserve in the refrigerator.
  • Remove the leather and cut bacon lardons
  • Onion double chiseling

                    Preparation

  • Sauté by concentration the chicken to seal in a pan with oil over high heat,
  • first on the side of the skin. Once the skin is well browned, turn it over to
  • seal on the other side.
  • Salt and reserve out of the fire on a platina.
  • In the pan where the chicken was sealed, sauté the bacon lardons. Lower the fire,
  • Add the onion and make it transparent. Incorporate the chicken again (with the skin towards
  • above) and deglasar with red wine. Finish cooking in a pan over a low heat and
  • covered for 15 minutes. As the liquid is reduced add bird bottom
  • (do not turn the chicken).
  • Once the ½ chicken has been cooked, add English sauce to rectify the flavor and
  • texture.
  • Season if necessary
