A super easy, yummy, healthy, and fun to eat recipe that took me under 10 minutes to make for dinner just now.
Get some fresh Collard Greens, preferably organic because you don't probably don't want to eat any toxic pesticides, from your local market, as well as refried beans, or any kind of beans, some rice(mine was frozen microwaveable rice) and some meat. Cooking the meat is not included in this recipe, I used leftover chicken that was used to make to make chicken broth, and was super good. I also added some fresh sweet and spicy corn salsa from Trader Joe;s, which gave it the perfect sweet flavor in each bite, it probably has some sugar in it, but not that much.
Ingredients (organic if possible):
- Collard Greens
- Refried Beans
- Brown Rice
- Pre-Cooked Chicken
- Corn Salsa (From Trader Joes)
- That's it
Now to do now is cook the rice, which you can microwave if it's microwavable (only took 3 minutes), or you can save money and buy bulk rice and cook it the old-fashioned stove top way, which will take 15 minutes or so, but is easy.
Then cook the beans and the meat together in a pan. Just heat it up, use some coconut oil or something to cook it in, I used Ghee(clarified butter). That takes like three minutes.
Then put it all in your collard greens, put the salsa on top, and wrap it up like a Taco, and that's all you gotta do!

Super easy, super healthy, an easy thing to add to your cooking repertoire that can impress your significant other. You can pretty much wrap anything in a collard green and it tastes good, as collard greens have a nice crunch and perfect bitterness to compliment most foods.
