Tom Yum Soup
Lemon Grass
2 Litres broth
1" Galangal Ginger Sliced
2-3 Thai Red chilli seeded & minced
5-6 Lime leaves
1 cup Sliced Mushrooms
1/2 Small onion
2 Tbsp Lime juice
2 tsp fish sauce
1/2 Cup Cilantro
Thai chili paste to taste* must have
1 diced tomatoe
Add 2 Litres broth to soup pot.
Remove green tops from lemon grass slice down middle add to stock
Add galangal ginger slices and lime leaves.
Simmer for 30 min or until you can taste the 3 flavors in the broth.
Strain then return to stove to simmer, add Thai red chilies, sliced mushrooms, Onion, Lime juice, Fish sauce, Cilantro. Then take a small amount of stock and add 1 tsp Thai Chilli paste then stir it into soup and blending after each addition & taste.( looking for a small after burn.)
not be so hot that it masks the flavor. Then add the shrimp, before serving cut up fresh tomato, the tomato really is important to the flavour.
