Indonesian dish Frikadelpan part 1
Thank you for all the positive comments about my last blog post about the Indonesian kitchen.
This time I am going to make a simpler dish.
It is simple but a very tasty dish.
Today I am going to cook Frikadelpan (you speak it as: perkedel).
My lovely granny makes this a specially for her grandchildren.
I have nice memories of my grandparents. In the Indonesian culture, it is usual that everybody stays for dinner. You did not bring a present with you, no you bring your own homemade food as a birthday present. All my aunts and great-aunts cook their own special dish.
Sometimes there were over the 50 persons on a birthday.
So you can imagine who much food there was. We as children had diner at the stairs because there was no more space left in de living room and kitchen. I have many beautiful memories of these birthday parties.
And today one of my these memories of birthday party’s by my granny will be back.
For this dish you need:
- Meatloaf
- Onion (fresh and powder)
- Garlic (fresh and powder)
- Egg
- Potato
- Sweet soya sauce
- Saxon liver sausage ( maybe this typical Dutch)
- Breadcrumbs
- Nutmeg
- Paprika
- Parsley
- Salt
- Pepper
- Sages
- 3 Cloves
Make a mashed potatoes with the paprika and salt.
Mortar in the "cobek & ulekan" the other herbs with sweet soya sauce.
Knead the minced meat with parsley, fresh garlic, breadcrumbs and sweet soy sauce and mashed potatoes into a smooth mixture.
Put the minced mixture in the fridge for at least 1 night. The ingredients can now retreat deliciously into the meat.
