Meal Prep - Chicken Breast with Bell Pepper, Onion and Garlic
On this Keeping it Real Kitchen Short, we show you a simple meal prep for lunch on the work day without breaking the bank.
Ingredients
3 boneless skinless chicken breast
1 medium white onion
1 green bell pepper
5 cloves of garlic
1/4 cup of cold water
(optional) salt & pepper to taste
Instructions
Preheat oven to 350 degrees.
Place chicken breast in a baking dish (preferably glass.) Season with salt & pepper to taste (optional.) Cut onion and bell pepper into sizeable strips and place on top of the chicken. Crush five cloves of garlic and place on top of the chicken.
Pour cold water around the sides of the baking dish being careful not to pout onto the chicken. Place aluminum foil on top of the baking dish; the last two steps create steam which cooks the chicken from the inside out, keeps the breasts moist, and creates a stock.
Cook chicken for about 45 minutes to an hour at 350 degrees or until the internal temperature of the breast reaches 165 degrees.
