I cook aubergine very often and fill it with different things.
Two things I do it different.
First, I strip the skin partly of the aubergine before I take it in the oven, because the skin becomes more softer and I can eat it.
Second, I baked after I fill it about 20min by 180 degree Celsius in a half inch high sauce of water and tomato mark and serve it together with a little rice. Kids will love it.
