Cooking bananas are banana cultivars in the genus Musa whose fruits are generally used in cooking. They may be eaten while ripe or unripe and are generally starchy. Some cooking bananas are also referred to as green bananas or plantains.
Dodo is one of every Nigerian’s favorite. It is also quite fast and easy to make. It can be eaten as a side dish, paired with any rice dish (Jollof Rice, Fried Rice, Coconut Rice etc), noodles, almost anything as a matter of fact. As yellow plantain ripens, its skin turns black. In this state, it could be mistaken for being past it or gone off. However, at this stage it is, in many ways, at its best. Natural sugars develop which, when fried, caramelize into golden treats like no other. In Nigeria, dodo is a classic cut from the same compilation as moin-moin.
preparation step
- Peel the plantain.
- Cut into small ovals.
- Heat your oil, keeping on medium heat.
- Fry the pieces until golden brown. Remove from the oil and let it drain on a paper towel.

You should always have in mind that it is important to stay with the plantains the whole time while continuously flipping till both sides are golden brown, else it will burn easily. I have burnt many a plantain just by stepping away to take a ‘quick look’ at my phone or something else.
