Last night's dinner date

There is nothing more satisfying when you come home from a long work day, to enjoy a nice dinner with your loved one. In addition, if the dinner you prepared also tasted fabulous, then it is double the satisfaction. I made this last night, not only my husband was impressed, I too was surprised with how delicious it turned out.

Our dinner last night included Roasted Leg of Lamb and Roasted Beets with Potatoes:

And, believe it or not, it was super easy to put together. The trick is simply organization and organization. To illustrate, I listed the following timelines and activities:

The night before:

  • I marinated the leg of lamb with lots of rosemary, garlic, salt, pepper and olive oil

Yesterday @ 5:30 pm:

  • I arrived home and took the the lamb out of the fridge and picked some potatoes and beets from my veggie basket. I left them sat on the kitchen counter for like an hour. In the meantime, I enjoyed a shower, organized the flat and checked the news.

Yesterday @ 6:30 pm:

  • I turned on the oven at 400 and peeled the potatoes and beets. I proceeded to season with garlic powder, salt, pepper, thyme and oil.

Yesterday @ 6:45 pm:

  • I put the seasoned potatoes and beets in the oven and I seared the lamb in a pan. I also made myself a cup of tea to enjoy while I'm making dinner (I know it sounds way more 'cool' to drink wine instead of tea but I don't drink, lol)

Yesterday @ 7:00 pm:

  • I pulled out the potatoes and beets and put the leg of lamb on top, returned the tray to the oven for another half hour. I also put some spinach on the plates and cleaned up the kitchen.

Yesterday @ 7:30 pm:

  • Dinner was ready. Simply let the meat rest for 10 minutes before cutting. The meat was so flavourful and moist. The roasted potatoes and beets were crispy and delicious. My husband was so happy (smile!).

This dinner date with my husband turned out to be a huge success. We talked over dinner and we also ended up watching a Netflix show together. Really, what's not to love about this dinner?!
