have you ever tried using coconut milk?
if you do, you won't be needing butter, a twist or two of cinnamon and some grated ginger would help, too

Dear Ivy - you should give it a try! It is delicious :-) I use coconut milk mainly when I cook Curry - samewith cinnamon and ginger... When it comes to Risotto I usually stick to the classical Italian style :-) One reason is that the kids like it best, haha
