Mark cut on mutton leg, spread fat, marinate with salt, papaya paste, ginger garlic paste, white pepper, black pepper and green chilies paste and keep in fridge.
Sajji consists of whole lamb or chicken, in skewers (fat and meat intact), marinated only in salt, sometimes covered with green papaya paste, stuffed with rice, then roasted over coals.
