There really is nothing quite like a warm slice of fresh bread served with a thick pat of butter on top.
This recipe is perfect. It’s simple to follow, takes about 2 hours to make and yields 2 loaves of wonderful bread.

- 650 g sifted spelt flour
- 250 g wholemeal spelt flour
- 60 g sunflower seeds
- 60 g pumpkin seeds
- 50 g oatmeal
- 100 g linseed
- 50 g chia seeds
- 1 tablespoon salt
- 1 l water lukewarm
- 1 pack dry yeast
Mix the dough ingredients together. At first the dough will seem very sticky and you’ll question if you should ad more flour. But you´re not going to do that. The dough is actually sticky after it’s thoroughly mixed.
Let it rise at room temperature for 30 minutes. Cover the dough and let it rise at room temperature for about 30 minutes until doubled in size.
Then you pour the dough into two well-greased baking form for bread and rise for another 45 minutes.
Preheat the oven to 225°C. Bake until golden brown, about 40 minutes.
After 40 minutes take the bread out the oven and take the bread out of the bread forms, and bake them upside down for 15 minutes for crispy crust.
This bread is so good. What i usually do is to slice the bread and put it in bags and then in the freezer.
