which is the momordica charantia, scientific name for bitter gourd or bitter melon, in our country we called it Ampalaya.As we all know there are so many health benefits from this vegetable.
INGREDIENTS
- Four cobs of yellow fresh corn
- 1/4 kilo of pork belly (sliced it into strip)
- 1/2 kilo of shrimp, remove the shell but keep the head for the shrimp juice
- 3-4 cloves of minced garlic
- 1 onion chopped thinly
- 1 bundle of momordica charantia leaves (Ampalaya leaves)
- 2 pcs. of green chili (siling haba) this is optional
- 2-3 tablespoons of cooking oil
- Fish sauce (patis) or Salt to taste
- 2-3 cups of water

Shrimp
Momordica Charantia (Ampalaya Leaves)
Shrimp Juice
Onions and Garlic
Green Chilli (Siling Haba)-optional
Cooking Oil
PREPARATION
- Wash the corn and get a knife then grate it. Then set aside
- Get mortar and pestle and crash the shrimps' head then add 1 cup of water into it after you crashed them, then get a strainer then strained it to get the shrimp juice. This will add more shrimp flavor to our dish.
STEP BY STEP COOKING PROCEDURE
- Turn on the stove then get a deep pan then pre-heat it.
- Put the cooking oil into the deep pan then saute' garlic until golden brown then put the onions and saute' until translucent.
- Add now the pork and saute' them together with garlic and onions, until the pork is golden brown.
- After that put now the grated corn and saute' them together.
- Next pour into the pan the shrimp juice.
- Then cover the pan and simmer it for about 5 minutes
- Add the 3 cups of water then simmer it until the corn become tender.
- When the corn is already cooked, add now salt or fish sauce (patis) according to your taste then finally you may now put the momordica charantia leaves and green chilli.
Once it boil you may now turn off the stove then our recipe is now ready to serve.
