How does Waves compare against Bitshares. I have been rooting for Bitshares but would definitely like to know more about WAVES and hedge by bets as I am currenlty betting fully on Bitshares.
The charges of trades are very high nobody is taking a note of that. I wrote a post on Irony of trading Cryptocurrencies on Centralised exchanges and why I moved to bitshares. But without the volumes on these DEX are still a long way from mass adoption. The spread is so wide that no serious traders would consider DEX yet.

Waves seems to function very similarly to ethereum because both are used to promote ICO's. The only difference is that Wings has this "prediction software." I'm not sure that Wings has enough separation to really differentiate itself and get out of the shadow of Ethereum in the context of facilitating ICOs.

And one big problem with all 3 – none of them work yet, they are all still in beta.

You are correct on Ethereum its looking like it should overtake bitcoin. The mining difficulty level for Ether is a staggering 1,696,250,640,483,555 compared to bitcoins 923,233,068,449.
