Without meat

Most soups I enjoy are things like Minestrone, or Barszcz, spinach soup, leak soup. Usually with either beans or potatoes as the protein in the soup. I'm not big on meat soups, even poultry soups. The soups I tend to eat are hearty soups with lots of veggies. Pottage style soups are good too, especially with butternut squash and sweet potato. Even Barszcz during the holidays has Uszka in it, and those have mushrooms, no meat.
