Thank you @fitinfun. The fairy floss is in fact a Chinese inspired recipe of the dragon beard. They use the same technique to make noodles, usually after the 5th time making the “8”. The yellow element on the coconut sorbet is in fact a mango purée. I didn’t document the steps in making it as it was used for presentation rather than an integral part of the recipe. That's very interesting to know it's like the noodles. I am in Kuala Lumpur now and I have seen them making those through a few restaurant windows.
I will follow for sure, but I really do not think my food is up to this level. I do not cook too much anyway since food is so good and cheap here right outside my door :)
