Rice with Spanish shrimps
This recipe is inspired by the paella, originally from Valence (France) and traditionally prepared on a fire of orange wood. It is eaten mostly with rabbit and chicken but this variant with shrimp and olives is just as delicious.
Cooking time: 35-40 minutes
Lactose-free / gluten-free
Ingredients:
2 cloves of garlic, 1 onion, 1 red pepper, 1 carrot, basmati rice, tomato paste, olives, lemon, turmeric, ground coriander, vegetable broth.
Preparation:
- Chop finely garlic and onion.
- Seed the pepper and cut into thin slices.
- Peel the carrot and cut it into thin slices
- Heat the oil in a wok and fry the garlic and onion for 2 min.
- Add pepper and carrot, turmeric and coriander and continue cooking for 4 minutes
- Add the rice, broth and tomato paste and let simmer 4 min.
- Salt, pepper and continue cooking with a lid until the rice is cooked, add broth otherwise.
- Trim the olives and lemon into slices
- cook shrimp (or other) in a stove over high heat.
- Serve hot with lemon slices.
