A few weeks ago, I rediscovered a totally paleo food that I forgot : buckwheat ! Yes, it isn’t a cereal, it’s a flower.
Theses days, eating for breakfast was quite hard. I was angry against it I think… The first meal of the day can be a problem with paleo. I was used to cereals, oatmeals and yogurt and I find hard to eat only eggs and fruits in the morning. After a moment I get bored. Mini crepes, or pancakes, allowed to make up with my breakie in order to be, once again, my favorite part of the day. I don’t know why but if in the morning everything is not perfect, I won’t be in a good mood for the day. It is simple as that.
To have buckwheat crepes ready all the week, I prepare them on Sunday or I put the dough in a glass bottle and I cook them one by one directly in the morning to have always fresh all the week long !
If you prefer, you can make big crepes… It’s up to you !

MINI BUCKWHEAT CREPES
paleo • glutenfree • vegan
For one liter of dough | Preparation : 5 minutes
Ingredients :
- 2 cups of buckwheat flour
- 2 ½ cups of water
- a bit of butter
Preparation :
- Put some butter in a pan at medium to high heat.
- Pour some batter into the pan and spread with a spoon. Let it cook until some bubbles pop. Flip and cook the other side.
- Pan as many crepes as you want
