Hello Steemers. How do you do? Today I'm challenging you to a simple vegan recipe of my own. A delicious chickpea stew with fresh tomato sauce. After preparing the ingredientes it takes about 20 minutes.
You'll need the following ingredients for 2 people:
- Olive Oil.
- Parsley.
- 4 garlic cloves.
- 3 fresh tomatoes.
- 1 large carrot.
- Half an onion.
- Green or yellow pepper.
- 400gr cooked chickpea.
- Canned or fresh mushrooms.
Start preparing the ingredients.
Wash your tomatoes and leave them in hot water if you wish to peel them.
Meanwhile, squeeze, peel and chop thinly the garlic cloves, cut your half onion in cubes or thin radial slices and make a cross cut on the carrot, and cut it perpendicular.
Cover the bottom of your pan whith some olive oil and let it heat for a couple of minutes. Meanwhile, cut your tomatoes into a bold like so...
Add the chopped garlic to your pan and as they simmer for a couple of minutes (careful not to burn them) chop into cubes a slice of pepper from one side or maybe 2 sides of the pepper and chop your parsley. Add your tomatoes (if they're juicy, not additional water is necessary) and cover the pan.
Leave in maximum heat for 6 or 7 minutes and then blend. Add salt and a spicy sauce of your choice.
Drain the mushrooms. Add the mushroom and the chickpea with their own water and the rest of the ingredients. Parsley can be added raw in the end as well as any other vegetable that you like more raw and chewy. (quantity in the picture is just for one hungry person).
Taste for seasoning, let it cook for 15/20 minutes. Do not cover the pan if the sauce is too fluid for some of the water to evaporate. Then finish it off with a twist of lemon juice and you're ready to eat. Voila
Change between cooked and raw ingredients to obtain the best out of each state. Many properties of herbs and vegetables are diminished while cooking, but others may increase, depending on the product in question.
