As promised I will post a competition jambalaya recipe that has either won or placed second in most of the competitions I have cooked in!! There are rules when you cook in the jambalaya capital of the world in Gonzales La they say you cannot use anything green. No bell paper or celery etc. You cannot use any color enhancers like kitchen bouquet. BUT we have tricks to make it darker and also add the flavor of celery and bell pepper without it being in there when the judges have it
