I share with you these yucca arepas. Years ago here in Venezuela we made cornflour arepas , that was never missing at breakfast. Now that flour is too expensive but we manage it so that the arepas are not missing, even with other ingredients. I made them with parboiled yucca and accompanied them with grated cheese. It's a meal of "resilience" and I'm "resilient" that's why it represents me.
Ingredients:Yucca, water,salt, cheese.
