RECIPE: Traditional Chinese Suan Tang Mian // 羊肉酸汤面

小的时候每次生病,爸妈都会为我做一碗香喷喷的酸汤面。比任何药都要管用。

Ever since I was little, the only thing that really cured my colds was a big bowl of fresh Suan Tang Mian (Sour Noddle Soup). Here's how to make it:

准备时间 Prep Time: 10 minutes 

烹饪时间 Cook Time: 10 minutes 

共计 Total Time: 20 minutes 

Approx. 1-2 servings 

原料: 

羊肉50g
绿叶蔬菜100g
姜7g,大蒜12g,葱5g
醋10ml
清水500ml
酱油7ml
孜然5g
淀粉5g
盐适量
面条200g 

Ingredients:  

50g of red meat (we used lamb here, but use whatever you like) 

100g of green leafy vegetables (for example: pak choi) 

7g ginger 

2 cloves of garlic 

5g spring onion 

10ml of balsamic vinegar 

7ml soy sauce 

5g of tumeric 

1 tablespoon of cornstarch mixed with 2 tablespoons of cold water 

200mg wheat or buckwheat noodles a pinch salt to taste 

1. 切好的羊肉内放少许盐,酱油,淀粉,孜然拌匀。锅烧热后放油,放入姜末、蒜末炒出香味后,放入羊肉翻炒,放入5ml醋,后盛出待用。 

2. 小锅内加入水烧开,加盐少许,放入蔬菜,煮熟后,将羊肉倒入汤中。再加5ml醋。关火待用 

3. 锅中清水烧开后,下面条煮熟,将面盛到碗中,浇上酸汤撒上葱花,可以根据口味再加点盐、辣椒油等。  

1. Cut the meat into cubes, add a pinch of salt, soy sauce, cornstarch mixture and tumeric and let it sit for 5 minutes. Add oil to the pan and stir fry your meat while adding 5ml of balsamic vinegar. Set aside in a bowl to use later. 

2. Bring water to a boil in a small pot, add a pinch of salt and add your leafy vegetables (Am Choi used here but feel free to use Pak Choi or any other leafy greens like spinach if that is available to you) 

3. Cook your Wheatnoodles until tender. Follow your packaging instructions, it will usually take you 5-10minutes. Now feel free to serve the noodles with the added soup on top and garnish with some spring onion.
