Here in Austin, Texas, we side with Oregon and California, welcoming our food trucks. In fact, food trucks are a beloved part of our city's culture. Naturally, there are legal requirements in order to do business in this city (as with any city), and so these mobile restaurants are generally considered safe as well as convenient. There's another positive note missing from your solid article here: Food trucks are frequently the starting places for eventual brick-and-mortar restaurants. Food trucks give local restaurateurs the ability to "test-drive" their concepts, while establishing a customer base. I've seen this happen a dozen times here in Austin.
