##Visayan dessert soup in Central Phillippines.
How to cook Binignit?
Ingredients:
5 cups of coconut milk
3 cups of water
3 cups of landang(palm flour jelly)
2 medium sweet potato peeled and cut into cubes
3-saba bananas peeled and cubed
1 cup sago(it can be different color)
1/2 cup brown sugar(depends on your taste)
Instruction:
- In a pot over medium heat,you have to combine water and coconut milk.Don't let it bubble.Just let it simmer.
- Cook and stir it occasionally.Add sweet potato and saba bananas.Cook 8 to 12 minutes,until it is already tender.
- Add landang(palm flour jelly),sago and brown sugar,continue to cook for about 8 to 10 minutes.
- Serve hot or cold.
This is the soup that all Filipino will eat during Good Friday.We eat it to avoid eating meat on that day.It is in observant of catholic feast which we do fasting during holy week.
We really enjoyed earing it with our family and relatives on Holy week.Even we always eat it but still it is delicious.
