(Now this is super complicated so stay with me here.)
Step 1: Buy a variety of colorful fresh or frozen veggies from the store
Step 2: Cook the vegetables (or don't)
Step 3: Eat them π
In all seriousness though, if you're trying to stick to some healthier habits in 2020 and are feeling discouraged, you might just be psyching yourself out. I know that I have been guilty of this so many times in the past. Thinking things like "I don't have time to prep healthier food." or "Veggies are SO expensive!", or "It's just too complicated to get veggies ready to eat". I hear ya babe, I think we all have been there.
So here's some of my none-sarcastic tips that have helped me and you might actually be able to apply.
#1 Buy What You Like:
This one is obvious but don't buy veggies that you know you hate. Okay, it might seem counter-intuitive to say not to buy as many veggies as possible. However, if you're constantly trying to MAKE yourself like certain veggies that you just despise. you'll end up with a negative connotation towards all veggies and not want to eat them ever.
#2 Buy Ugly Veggies:
No, I don't mean finding the most exotic, spiky, weird veggies. π΅I'm talking about discount vegetables. If the cost of veggies is an obstacle for you, try looking in the produce section for slightly blemished produce that you can get for a steal. I save so much money doing this. You can also try shopping farmer's markets for the freshest produce.
#3 Make Vegetables the Star of the Show:
We tend to plan our meals around carb or protein sources and if a vegetable happens to show up in the meal, cool. I've noticed a huge difference in shifting my thinking from getting in more micros over more macros. Try choosing what vegetables you're having for a meal first and then decide what you're putting with them.
#4 Don't Be Boring:
At the end of the day it's really really important that you get excited about eating veggies. Let's be real, you'll never stick with something that doesn't make you happy. Focus on how much better you feel when you eat more nutrient dense foods and don't be afraid to try all the spices and sauces. No one said you have to eat straight up lettuce.π«πΏπ
Spices are extremely good for you too, so play around and make them taste food.
