I'm an anime lover and I love to promote the medium. That being said, it's a vessel and as such is no better than what is put into it. To say that anime is about quality is to mistake style for substance.
As people who don't live in Japan we already have had what anime we are exposed to filtered. We only see what others have deemed worth sharing. There is plenty of dreck nobody knows about. As an example, do a web search for "Gundou Musashi" and experience the awfulness of this 2006 anime that looks like something that would have been considered bad in the '70s.
Also, what you said, "all animations are all based on your opinions and how you view them," is completely right. Value is subjective, not just for art, but for everything in life.
