We Are Alive! Pumpkin Preservation

During our "frozen veggies" problem, among our veggies were our three pumpkins from our garden. They were volunteer from the compost and a wonderful surprise last summer. We picked them while they were still green, but they ripened to a bright orange in the garage.

We cut it open, wondering if it was ruined having been frozen solid in the garage: but it looks great! Seeds are mature and intact and there is lots of pumpkin flesh!

Some of the seeds were damaged by the frost, but we were able to save a bunch of them. We'll try planting them again this coming spring.

We cooked the pumpkins and saved all the flesh in gallon bags to be frozen (again) in our chest freezer.

What an abundant harvest, reaping what we did not (intentionally) sow. Our barn is full and the future is looking bright.

Pumpkins are associated with Halloween for me but this one is a little different for me.

We're pumpkin EATERS, instead of pumpkin CARVERS. !BBH

This pumpkin is actually different from what we see at this end and the preservation method as well.

We're not sure what variety of pumpkin this is, since it came up by it's self! !BBH

You never really know what you're going to get out of the compost. It's great that, despite the problem caused by the frost, you managed to save many seeds. My wife knows how to make a pumpkin pie, which here in Venezuela is known as 'auyama'.

Oh pumpkin pie is so good. Maybe I can convince my wife to make some. !BBH

The pumpkins are looking very fresh and beautiful. In our village here we also grow different kinds of vegetables. Eating fresh and home grown vegetables is so nice..
