Try this African banga stew called ofe akwu

Sunday is few hours away here in Nigeria and preparation for Sunday rice has started. Why not try this recipe.

Ingredients needed includes
Palm fruits known as banga or akwu

Fish (Titus)

Ehuru(calabash nutmeg)

Crayfish
Stock cubes
Salt
Pepper
Ogiri okpei
Dried fish

Procedure
Boil your palm fruits(banga) until soft pour it into a bowl or mortal and add some warm water to extract the oil.

After extracting the oil, pour it in pot and place it to boil . Once the extract boils and begins to thicken put your dried fish,you add the ehuru and ogiri okpei.

Once it boils add your steamed titus fish. Put in some stock cubes, crayfish,pepper and your salt to taste. Lastly add your sliced scent leave for that african aroma. Stir and allow to boil for two minutes and it is set.

Serve with white rice.
