This is a beautiful set of poetry, I can see that you really love your fiance very much. She's very lucky to have you, not everyone can express their love so eloquently and elegantly.
I like your second poem the best, mainly because I'm a sucker for rhymes. Although the stanza (is that the word?) ending with "protection" then "living" kind of bugs me, since that breaks the pattern. But that poem reads like a gently flowing stream, very smooth and continuous so I can imagine a kind of breathless love that you have when you gaze at your future wife.
The third poem, I think, complements the second one - each first line is very soft but urgent, each second line is when you take the time to breathe and relax. I'm impressed at how you pull off the language like that, I'm not sure how you did it but that's the feeling I get from reading that poem, maybe less rhyme but still has feeling and rhythm.
