العرق سوس بالقماش المكوّنات مئتان وخمسون غراماً من عيدان العرق سوس المطحونة. ملعقة صغيرة من بيكربونات الصوديوم. لتران من الماء. طريقة التحضير نضع العرق سوس المطحون على قطعة قماش ونرشّ فوقه بيكربونات الصوديوم. نلف قطعة القماش بحيث ينحصر العرق سوس في منتصف القطعة ويأخذ شكلاً دائريّاً، ونربط قطعة القماش جيّداً فيجب التأكد من أن لا يخرج شيء من العرق سوس. نضع قطعة القماش في وعاء يحتوي على لترين الماء، فيتحلّل العرق سوس، ويخرج من قطعة القماش ويُحلّ مع الماء، وتبقى قطعة القماش ليلة كاملة في الوعاء، ويُغلق الوعاء حتّى لا تدخل الشوائب فيه. نُخرج قطعة القماش من الماء، ويوضع العصير في عبوة زجاجيّة لكي يحفظ في الثلاجة. نُقدّم مشروب العرق سوس بعد أن يبرد جيّداً. العرق سوس المغليّ مئتان وخمسون غراماً من العرق سوس. لتران من الماء. طريقة التحضير نضع العرق سوس في قدر ونسكب عليه لتري الماء ونضعه على نار متوسّطة. نزيل الرغوة التي تنتج عند بداية الغليان. نطفئ النار ونترك القدر ساعتين، وذلك حتّى يأخذ الماء طعم ولون العرق سوس بشكل أكبر. نصبّ العرق سوس الناتج بعدد تصفيته في عبوة زجاجيّة، ونضعها في الثلاجة. نُقدم مشروب العرق سوس بعد صبّه في أكواب مع الثلج، لأنّه كلما كان أبرد كان ألذّ.
